Avocado & Tomato Mash

Here’s a really quick but AWEsome snack or lunch idea!

I am always on the look out for nutritional and interesting foods and recipes to try for lunch. Along with nutritional, it has to be quick! I pack my lunch for work everyday and I prefer to grab and go. The below are a few ingredients you can bring to work and prepare at your desk or in the kitchenette.  I’ve tried this out more than once.

Avocado & Tomato Mash

1 Avocado

10 cherry tomatoes

pepper flakes

pinch of salt

  1. Gut a ripe avocado then mash chunks with a fork
  2.  Cut the tomatoes into fours
  3. Add both to container and mix – adding pepper flakes & salt to taste.
  4. Serve with 1 serving (3 slices) of  your favorite kind of crisp bread

Avocados provide GOOD fats and amino acids and tomatoes provide antioxidants and are full of vitamins like A. C and E.
