Spicy Mushroom – Strawberry Salad

The “hardest” part of this recipe is sautéing the mushrooms just right. Mushrooms are also the most special part of this quick and easy salad, they create a base layer for the milder feta and sweet strawberries.

  • Spring mix or spinach
  • fresh strawberries
  • feta cheese
  • mushrooms
  • red pepper flakes
  • salt
  • olive oil
  1. Slice and about a pound of mushrooms I used button and portobello varieties.
  2. sauté on high in a tablespoon of olive oil, sprinkle in salt and pepper flakes to taste
  3. reduce heat and let simmer until liquid has reduced – then cool
  4. build your salad: portion section in fresh ingredients – i find that keeping each ingredient in its own pile to keep from touching gives the best result for meal prep. (mix when you’re about to enjoy)
