Berta’s Beet root Smoothie

I dislike beets. I’m pretty confidant I went an entire decade without laying hands on one of these red roots. So I have heard beets are delicious, and more importantly have ridiculous nutritional value. (a good source of dietary fiber, magnesium, phosphorus, vitamin C, iron & vitamin B6) Last year I added beets to my juicing list and was pleasantly surprised when I didn’t die from the awful taste I remembered from childhood, my dad boiled canned beets and thickened them up with flour – horrendous tasting and visually disturbing. That being said, I still haven’t gone as far as sampling any  from featured “beet bars”.  I marvel at the idea instead. Beets taste earthy and are slightly sweet – I actually do enjoy the fresh aroma given once you cut them up. This past weekend I turned a beet into a lovely smoothie. I enjoyed it, and plan to recreate it often. The recipe is below.

  • Half medium sized beet skinned
  • 1 small green apple peeled & cored
  • 1 ripe frozen banana
  • large handful of spinach
  • 1-2 ounces of water

Blend in your Magic Bullet until smooth. DRANK!
