If you need a new idea for healthy CLEAN breakfast or lunch – Try these super easy baked super avocados. Avocados contain GOOD fats and give plenty of energy to support a busy day AND furthermore – eggs are full of protein. In just 5 ingredients or less for 30 minutes of your time, you can accomplish a nutritious tasty meal. Just remember everything in moderation!
You will need…
- 1 avocado
- 1 egg
- Freshly grated cheese (your choice, I used asiago)
- A dash of salt
- Pepper to taste
Prep
Set the oven to 350.
Cut the avocado in half and remove the seed. Scoop out a little extra avocado to make room for the entire egg (or just egg white). Make sure the avocado is placed securely on a baking sheet and add the egg into the scooped out indentation. Sprinkle the grated cheese evenly then top with salt and pepper. Bake for about 20 minutes or until the cheese is browned to your satisfaction.
Not only is this dish delicious – but it’s beautifully bright as well!
