Cranberry-Quinoa Winter Salad

It’s cold! It’s winter and being trapped inside every day makes you want to revert to eating hearty comfort food daily. Life must go on and we have to find simple options that are fresh and tasty but also filling. This salad is hearty and surprising – there is a little bit of all your favorite parts of a salad, green leaves, texture, and a salty-sweet combination. You can devour this salad warm or cold, meal prep for lunch or dinner, or just as a side to a protein.

What You Need (5 servings)

10 ounces – Arugula, Spinach, or spring mix

5 tbs – Cranberries

5 tbs – Goat Cheese

5 tbs – crushed pecans or walnuts

2 cups – prepared red quinoa

1 cup – sauteed mushrooms

5 airtight containers

What to Do

Divide the greens equally into 5 parts and fill each container with a generous layer. Next add 1/3 cup of quinoa to each portion and 2 tbs, of mushrooms. Follow with 1 tbs of each of the rest of the ingredients.

Oil and vinegar work well to dress this salad but adding dijon or honey mustard to the mix give an amazing kick.
