Avocados are included in my quarantine staple list. At least once a week I indulge in avocado toast and a big green avocado-banana smoothie, but not on the same days. Don’t be intimidated by the fancy avocado toast that can cost up to $20. Below is an easy, filling breakfast or lunch that you can accomplish for less than $3 per meal.
Few ingredients, maximum flavor. The Avocados have a buttery flavor that intensifies with salt.
What you need
- 1/2 avocado
- 4 cherry tomatoes
- coarse salt
- red pepper flakes
- Wheat bread
What to Do
Toast the bread, slice the avocado and tomatoes, and sprinkle on the seasoning.
