Grilled Cheese Tomatoes

Grilled cheese, hold the bread!

USUALLY on Saturdays I wake up with a craving for pancakes or something smothered in jelly or honey – then I act accordingly and make my favorite smoothie. There are the RARE occasions I yearn for a savory approach to breakfast and I usually scramble and spice eggs to scratch that itch, but this weekend I tried something different. Last week I made my delicious little basil tomato pizza and I bought the most gorgeous vine tomatoes for the recipe. I only used 2 so, I still had a few gorgeously firm tomatoes just chilling in the fridge. I also had an assortment of cheeses left over from my famous crack mac and cheese made for a cookout. I’m nothing if not resourceful – that counts for everything in life. I got an idea for bread-less grilled cheese, because I NEVER buy bread but I absolutely love grilled cheese. I’ve had situations where craving a grilled cheese sandwich, I bought all the absurdly bad ingredients just fill the void with one sandwich.

On a whim I have alleviated the urge to willingly fall into that trap again.

Heres what I used

  • 2 firm medium sized vine tomatoes
  • smoked Gouda
  • cheddar cheese
  • olive oil
  • salt & pepper

Heres what I did

Preheat the oven to 375 degrees or simply use the broil setting. Slice the tomatoes as thick as you like, make them sturdy, mine were about half an inch. Place them on foil or a lightly oiled cookie sheet. Sprinkle on the cheese layered, then a light sprinkle of salt and red pepper flakes to taste. Lastly drizzle on a little olive oil. Place these in the oven for about 15 minutes or until the cheese has browned lightly. If broiling it should take half the time.

Really, these are a time, carb and calorie saver.
