Pink Grapefruit-Feta Salad

Looking to spruce up lunch or dinner with an interestingly flavorful salad? Try this delicious grapefruit featured creation. I’m a huge fan of grapefruits, I like the bold citrus flavor and the tartness. I also like bold flavors like feta cheese, put both together and you create a light but tasty low-everything salad. I meal prepped this for lunch, and I found myself looking forward to it daily, simply because it contained some of my favorite ingredients. This uncomplicated salad contains easy foods that you either should have stocked in the fridge or can pick up at any random corner store.

What you need for meal prep

  • 2 pink grapefruits
  • 5 tbs crumbled feta
  • 8 ounces – spring mix
  • 8 ounces – spinach
  • 1 small red onion
  • 1 large cucumber
  • 5 16 ounce air-tight containers

What to do

Peel the grapefruit and divide into petals, cut each petal into 3, 1-inch pieces.

Finely chop onions into thin rings and sprinkle the desired amount as the bottom layer in your air-tight containers. *Layering in the onions first prevents all the ingredients from picking up the aggressive onion taste.

Next, separate the greens into 5 equal parts and layer into the containers. Each container should have a handful of each on top of the onions.

Slice the cucumber into bite-sized pieces and separate 5 ways equally, then add that layer along with the grapefruit layer.

Finally, add 1 tbs of fetta cheese on top to each container.

This salad goes great topped with a little olive oil and sprinkle of coarse salt.

Store in the refrigerator in air-tight containers OR mason jars for up to 5 days.
