Perfect Picnicking + Blistered Shishitos🌱

Summer weather is finally here and it’s time for some picnicking! I love a good picnic, paired with fresh foods, chilled prosecco, and warm sun. Forget prepackaged foods that may be a little easier to pick up and give yourself about 30 minutes to prep perfect snacks for fun in the sun. Here are a few healthy but simple picnicking ideas and an easy recipe for blistering shishito peppers below.

CHEESE

Start with a nice white cheese, this could be as simple as cubed swiss or as interesting as a small wheel of soft Brie.

CRACKERS

Don’t forget the crackers, whether they accompany the cheese or you snack on them alone – they are easy to pack and a great snack in any situation. Try Triscuits or Wheat Thins.

FRUIT

This is a given, almost any kind of fruit will do. My go-to’s are usually strawberries. They are bite size and only seem to enhance in flavor over time. Plus, you can add them to your champagne or prosecco if your feeling fancy. Really, any sort of berry or sliced melon will do for a perfect picnic.

VEGGIES

Raw, pickled, roasted or blistered! Grab some spicy olives or just pickles, they transport well and are a nice low-calorie compliment to picnic flavor profiling. Peppers are my preference, I usually pick up some fresh shishito peppers to blister and salt. The recipe below takes all of 15 minutes and cost less than $5.

MEAT

WATER!

This is very important! Remember, hydration – especially when drinking in the sun. You could stick with boring bottled water OR you could spruce it up a bit with a few strawberry and lemon slices and leaves of mint or basil.

Shishito Peppers

  • 12 ounces fresh Shishito Peppers
  • 3 tsp coarse salt
  • 1 lemon

In a heated pan coated with olive oil carefully drop the clean shishito peppers in and let each side blister (each side – about 3 to 5 minutes). Slice the lemon and let each side brown. After peppers are browned well, squeeze the lemon juice over the peppers and sprinkle the salt sparingly. Enjoy!
