- 1 cup prepared Quinoa (cooked in broth or without)
- 1/4 of a large avocado
- 1 tbs dried cranberries
- Juice of half a lemon
- 1 tbs of fresh asiago or parmesan cheese
- *Optional – ground Pepper to taste
Slice up your avocado. Mix (prepared) Quinoa, avocado & cranberries together. Squeeze in fresh lemon juice & top with fresh cheese & pepper.
