A first for me, this summer my 15 year old niece came to visit me for 3 weeks. I aimed to give her a healthy living workout-shop to teach to my family back home in Pittsburgh. The object was to show her my day-to-day healthy lifestyle and to demonstrate how easy it can be to make small choices that create a healthy environment. I think I accomplished my point, her shedding pounds while here visiting was the true testament but if the information was retained – only time will tell. I will say the intervention felt great.
Now I’m not sure if she loves me for it or resents me for not offering her any butter, sugar and barely salt while she was here but I introduced a few foods that seemed to stick. So much so that she requested them when asked what was preferred for breakfast, lunch or dinner. 1 was my basic fruit smoothie – the other was an easy tuna wrap. Keep in mind I grew up eating “tuna salad” on white bread with processed american cheese & Miracle Whip. The tuna was… regular tuna – in OIL. Now – I can NOT. But then – I did, and never knew any better. Currently, I know better so I do better. Anyhow here is a recipe for a classed up healthy version of a tuna sandwich.
- 1 Rye Wrap
- 1/3 can White Albacore Tuna (drained)
- Spring Mix lettuce
- Fresh Cilantro
- 1 tablespoon shredded parmesan
- Red pepper flakes (as much as you can stand)
- 1/4 mashed avocado
- Sprinkle of lemon juice
Throw all the stuff in the wrap and sprinkle on the lemon before you close it up. This is clean eating at its best and the epitome of filling, full of protein and oddly explosive flavors that pair amazingly well. Wonderful for lunch OR dinner. #therobertashow
