This is a not so basic hot chocolate recipe that’s great for these cold nights and chilly mornings this holiday season. I was inspired by one of my most favorite holiday movies – National Lampoons Christmas Vacation, to buy these awesome moose cups. I found them online easily, but it didn’t make sense to actually use them for egg nog (as Clark did in the movie while he’s contemplating the idiocy of his cousin in law, the jobless but kind-hearted Eddie). Anyway, I opted to try out a fancy hot chocolate recipe. I thought the dramatic moose horns on the cup would look great with a marshmallow pile in between, and boy was I right!
What makes the recipe really stand out from regular hot chocolate in the cinnamony-nutmeg spice, it screams hearty holiday goodness.
This recipe replaces sugar with stevia and I add Kahlua for the adult beverage option. (Omit the Kahlua for kids)
What you need
4 cups Almond milk
1/2 cup water
dash of salt
1 tsp stevia (or 1/2 cup sugar)
1/4 cup Hershey’s cocoa
1/2 cup of Kahlua
3 large marshmallows
1 tsp vanilla extract
What to do
Over medium heat bring mix sugar/stevia and salt together in a saucepan. Stir until mixture boils for 2 minutes. Stir in milk and seasoning and heat to boiling, then remove from heat. Stir in vanilla and Kahlua. Add marshmallows, drink immediately.
makes 6 servings, also AMAZING as chilled chocolate milk
