I’m obsessed with dates – see the previous post! I’m finding all sorts of interesting ways to use dates as a sugar substitute. I came across this recipe and tweaked it slightly to make it Tabbalicious. These tasty little desserts literally took 20 minutes from start to finish. I LOVE cookies, I love peanut butter and I now loves dates, WINS all around. Additional perk – dates are FULL of fiber!
5 ingredient date cookies
What you need:
- Pitted Dates – 1 cup
- Creamy natural Peanut butter – 1 cup
- Vanilla – 1 Tsp
- 1 large egg
- nutmeg – 1/2 tsp
Parchment paper, fork, food processor/blender
Makes about 14 cookies
What to do:
Preheat oven to 350 degrees.
Blend the dates in the food processor, adding 1/2 TBS of water if needed. Once the dates are blended into a paste add all the additional ingredients. Once well mixed, with wet hands form mixture into 1.5 inch balls and place on a baking sheet lined with parchment paper. Place balls 1 inch apart, then with a wet fork flatten and create a criss-cross pattern. Bake for 10 minutes exactly. Cool for a few minutes and ENJOY! Seal in an airtight container, 2 a day keeps the sugar urges away! enjoy & SHARE!
