I love great big messy cobb salads. More often than not, there are so many extra ingredients that the health factor is null and void. Cobb salad seems like a good idea – but really it’s just a tasty and filling farce, any healthy aspects of the salad are drenched in dressing and bacon! Here is my riff on a semi-healthy cobb salad. As filling as it is tasty for lunch, but probably at the bottom of the list of all my nutritionally inclined recipes. So let’s meal prep! This salad actually kept for over a week – the only questionable ingredient are the tomatoes.
Layer as many veggies as you like as ordered below
- blue cheese dressing – 2 tbs
- hardboiled eggs -1
- turkey bacon
- romaine lettuce
- blue cheese crumbles – 1 tbs
avocado – 1/4 (optional) – don’t jar / keep this separate
