If you know me in every day life, then you know i’m a sucker for sweets … and an outright savage for cake and cupcakes. True to form the only sweets I considering eating semi guilt free are MUFFINS. Also true to form, i’m VERY concerned about what actually goes into the delicious muffins my local breakfast shop or bakery cart conveniently supply. I sought out a banana nut recipe (since I ALWAYS have extra ripe bananas to freeze at the end of the week) that I could alter a bit to make it more waist & taste friendly. I believe in the FEWER amount of ingredients the better so it won’t be hard to find most of the list in your kitchen already.
Ingredients:
(Makes 12 muffins)
1 tablespoon – chia seeds
4 large, ripe mashed bananas
1/2 cup white sugar
1 egg
1/4 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour
Directions:
Preheat oven to 350 degrees
Blend wet ingredients (i use a hand mixer)
Stir dry ingredients
Then mix both sets together thoroughly.
Pour into greased muffin tins
Bake for 20 minutes.
I make these about once a month and pack two for breakfast. They are just sweet enough and a filling way to start the day.
