Apple Quinoa Muffins | Breakfast Ideas

IMG_7841I found a really interesting recipe on Pinterest that I wanted to check out. Quinoa is not my favorite superfood to cook but it’s killer in a salad or as a spicy side dish, so naturally when I saw an opportunity to create something sweet and healthy I was intrigued. The recipe called for a few ingredients – I’d rather not consume daily so I made some adjustments (such as white sugar). I also added a few superfood ingredients for texture & maximum impact (walnuts & chia seeds). In all these took about 35 minutes to prepare but I have a weeks worth of breakfast or snacks to show for it. The apples offer a subtle sweetness and the nuts offer a satisfying crunch.

These are full of the best things to start your day, such as fiber & protein.

  • 1 cup cooked quinoa
  • 1.5 cup quick oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoon chia seeds
  • 1 tablespoon natural honey
  • 1 tablespoon granulated sugar
  • 1 cup chopped apples (I used granny smith)
  • 3 eggs, lightly beaten


Mix all the wet ingredients then fold into mixed dry ingredients. Set the oven to 350 degrees. Spray cupcake tins with oil and fill to the top with your quinoa mixture. Let these bake for 15-20 minutes. I let them cool for a few minutes before removing from the tins.

Each muffin has about 45 calories. These are amazing for breakfast, slightly sweet and crunchy – but full of the absolute best things for morning nutrition.
