It is known that members of my family still prefer cranberry sauce from the can as opposed to my tangy homemade sauce. I can only attribute this to nostalgia. So now there are now always 2 types of “sauce” on our holiday table and there are always leftovers. I could make less or I could freeze the access but, this year I opted for a more creative solution. Cranberry Brie Crostini’s. I have also noticed from my cheese plate, that half the cheese wheel is usually leftover from the appetizer table. These 2 things pair perfectly together, all they need is a vehicle – enter the French baguette. This recipe is terribly easy – and since it’s the holidays, you probably already have all the ingredients to create.
What you need
1 French Baguette
Leftover homemade cranberry sauce
1 small extra creamy brie wheel
2 tbs olive oil
2 tbs butter
What to do
Preheat oven to 350 degrees
Slice baguette into 1/2 inch thin slices. Melt butter & whisk together with olive oil. Coat both sides of bread slices with mixture. Bake each side for 6-7 minutes, or until lightly browned.
Next, add a thin slice of brie to each slice and top with a dollop of cranberry sauce. Garnish with rosemary or sage sprig – eat!
