Summer Salmon Skewers

Skewers SCREAM summer! They are clean, easy and tasty and best thing about a skewer is that you can use almost anything you want, you technically don’t even need a protein. Try this with or without the salmon and you wont be disappointed. I love pulling chunks of charred veggies off a wooden stick to snack on guilt free. I bake or broil these in my oven but it’s an absolute dream to use the grill during the outside months. When entertaining, colorful skewers are a gorgeously healthy treat your guests won’t be able to resist. To get started, start with the below.

What you need

  • Fresh Salmon
  • Pineapple
  • Peppers
  • Mushrooms
  • Cayenne pepper
  • wood skewers

What to do

Preheat oven to 400 degrees (if baking)

Cut the pineapple and salmon into 1 inch chunks and slice the peppers and mushrooms into half inch pieces.

Place the pineapple into a bowl and sprinkle a generous amount of cayenne pepper and mix until al the chunks are well coated.

Next stack all your ingredients onto a skewer. I usually get through 2 sets of each ingredient starting with mushrooms then peppers, salmon and pineapple (repeat twice per skewer).

If baking place the skewers on a baking sheet and bake for 20-25 minutes, or until tips start to brown. If grilling place on the grill over medium fire and grill for 15 minutes turning every five. Grill until desired char.

EAT on the skewer or remove, these are also great cold or added to a salad on a bed of greens.
