Clean eating at it’s finest. Arugula is an excellent source of fiber, vitamins A, C (for the immune system), and K (bone strength). (Added bonuses folate, calcium, iron, magnesium, phosphorus, potassium and manganese.)
I planted a pack of $1.89 Arugula seeds on May 5th. By July 5th here’s what happened.
Basically in 2 months I had a healthy harvest of Arugula to add to a weeks meal prep. After planting I simply watered daily and alternated direct sunlight with indirect occasionally. Easiest windowsill project ever, the Arugula was ready to cut once it grew to about 6 inches, the longer it grows the more peppery the tips get. In two more months i’ll have another harvest to claim.
