
It’s not often I come across a recipe that’s delicious warm or cold, but this salad creates and breaks the mold. It’s HOT, and salads and smoothies are in season. This Quinoa-Chickpea creation is delightful warm or fresh out of the meal prep fridge. The quinoa leaves you feeling full and the kick from the fresh spice and lemon will brighten your meal. Now try this! (for lunch or dinner)
what you need
- Quinoa – 1 cup
- Chickpeas – 16 ounce can
- Spinach – 5 cups
- Cherry tomatoes – 10 ounces
- Jalapeño – half
- Chives 3 stalks
- Juice from ½ lemon
- Cumin 2 tsp
- Coarse Salt – 1/2 tbs
- Cilantro – a few sprigs for garnish
what to do
Prepare the quinoa as directed, set aside to cool. Finely chop jalapeno and chives and cut tomatoes in half. Rinse chickpeas and pour into a medium-sized bowl, use your fingers to smash half of the chickpeas in the bowl. Once the quinoa has cooled add to the chickpeas along with the cumin and mix well. In a separate smaller bowl mix the tomatoes, lemon juice, chives and jalapeno. Combine the veggies mixture to the quinoa and toss well. Lastly, sprinkle on the salt and as much cilantro leaves as you like. Serve on a bed of spinach leaves.
