By now you should know that I have a serious sweet tooth. A few time s a year I TRY to give up any foods that contain processed sugars. I have done a good job of finding naturally sweet things to eat in place. During this never-ending quarantine, I admit that I need a sweet treat to take the edge off. With that said, sweet chewy dates have become a staple, they are so filling that one or two is enough to calm my craze.
Check out this easy and minimal treat idea. These do well stored in the refrigerator for up to 5 days.
What you need
- Medjool Dates
- Natural crunchy or smooth Peanut Butter
- Dark Chocolate Chips
- Natural Coconut Flakes
What to do
Start with room temperature dates. Slice the dates long-ways and remove the pits. Use a small spoon to scoop in about 2 tbs of peanut butter. Next add a flurry of coconut flakes. lastly, top with a dollop of chocolate, this could be a few chocolate chips or chocolate that is slightly melted. ENJOY.
Store leftover in a sealed baggy or air-tight container.
